Cooking Tips

Great cooking tips such as these are what you’ll need to prepare your meals in a quick and easy way. Here are few examples.

  1. When making dishes that use spices to flavor the food, it is critical to start with the tempering of the mustard or cumin seeds in hot oil. This will impart the base flavor to the dish. When mustard seeds get toasted, they turn grey and pop wildly from the pan. Cumin seeds start turning dark brown in color. You can also use a pan lid or screen to contain them.
  2. Powdered spices like coriander powder, chili powder etc should not be toasted but should be added to the base sauce when onions, ginger and garlic are well browned and you have added tomato puree or sauce for the curry. This helps the vegetables or meat get the flavor from the spices during the cooking process.
  3. When planning a meal, try to incorporate a few primary tastes: sweet, salty, sour etc.
  4. Use heavy or thick pans to toast spices. Always cook meats on low heat.
  5. When adding garlic, always add it after the onions as it cooks faster.
